Meal Plan 6/7-6/13

Previous Week (meal plan 5/31-6/6)

Meal Plans are wonderful, but life happens. Here is a review of last week's eats and how it all turned out. 


Monday afternoon was spent at the in laws eating BBQ and laughing with the family. Dessert was my domain. The chocolate chip cookies were outrageous served them with homemade vanilla ice cream. My only regret was giving most of them away.


Tuesday, Betty Crapper struck again when she attempted corn tortillas. Unfortunately, I didn't do my research before attempting the tortillas. The tortillas were quite dry and soaked up much of the delicious homemade enchilada sauce. I can't wait to try them again. I will master the humble corn tortilla. I hope.


Wednesday's baked ziti was quite plain. I need to find a tastier recipe. Any suggestions?

At least the whole wheat bread turned out fantastic. I love the smell of homemade bread baking in the oven. Don't you?



I loved Thursday's fresh corn soup with roasted corn guacamole. I'm so glad my husband found the recipe. I served the soup with leftover chicken enchiladas. I had to pour great quantities of water into my baking dish to make the corn tortillas pliable. The water worked it's magic and the enchiladas were salvaged.


Friday's homemade pepperoni pizza was excellent. I made enough dough for three crusts. Two pizza dough balls are now hanging out in my freezer. Lucky me!

I added ricotta cheese to my usual pizza toppings (pepperoni, red onion, and mozzarella) and loved it. You can never have too much cheese. 


Saturday, I ended up eating a waffle with maple syrup for dinner. I was extraordinarily tired after my nine month old decided to party from 1 to 3 AM the previous night.



Sunday, my family came over with pizza for a late lunch. I also made brownies. I ate so much I couldn't contemplate dinner. Meatloaf will have to wait until tomorrow.

Meal Plan

Monday: meatloaf and buttermilk mashed potatoes
Tuesday: peach chicken with brown rice
Wednesday: picadillo with white rice
Thursday: leftovers
Friday: beef manicotti, ciabatta bread, and salad
Saturday: Dinner at my mother's
Sunday: homemade pepperoni pizza

I reserve the right to make substitutions and deletions due to laziness.

One of my childhood friends had a baby last week. When I asked her what baked yumminess she wanted, she requested my 
carrot cake. It was her father's favorite.

  1. Good Morning!! Love the waffle for dinner...:) Would love a recipe to make bread. I saw some really cool bread makers in the store the other day and thought about how nice the house smells with freshly baked bread. Pizza and brownies lookd delish!!!! Can't wait to see your Peach chicken tomorrow.

  3. Oh, I adore manicotti! I've never made it though... need to put that on the list. :) Your pizza picture made my tummy rumble... I love ricotta on pizza. I am in complete agreement... you simply cannot have too much cheese.

  7. It looks like a tasty week. And I love how the brownies followed up the 1-3am wake up call. If Andrew did that to me, I'd be needing a brownie to get through the day as well!

    JessieLeigh, manicotti is easy. I usually use the recipe on the back of the box for cheese manicotti. You should try it. I'll try and take pictures of the manicotti this week. No promises I'll be able to post that one this week.

  14. Love your recap. Don't worry I am not master at making corn tortillas either, I actually broke my tortilla press, and trust me I am not that strong, so I had to roll them out and though they tasted great, they weren't very pretty.
