Meal Plan 5/24-5/30

Last week's meal plan, as predicted, was not followed precisely. Betty Crapper never made the chicken piccata or the chicken paella. Life happens and now I do not have to shop for two dinners.

Meal Plan

Monday: chicken piccata with white rice
Tuesday: ground beef tacos with homemade tortillas, salsa, and guacamole
Wednesday: chicken paella
Thursday: baked ziti, salad, and homemade bread
Friday: chicken with warm tomato-corn salad
Saturday: homemade pepperoni pizza and salad
Sunday: coffee spice-rubbed ribeyes with smoky tomato-red chile salsa

I reserve the right to make substitutions and deletions due to laziness.

Surfing food blogs has unintended repercussions. Betty Crapper finds herself craving an inordinate amount of sweets. Because last minute trips to the grocery store are no fun with a nine month old, a baking wish list for the week will now be included in my weekly meal plan. Why a wish list? Betty Crapper is not perfect, frequently procrastinates, and has a nine month old.

  2. That's an impressive menu! That warm corn tomato salad sounds divine. I had a paella on Saturday that would make a grown woman cry; everything from chicken to sausage, to shrimp, to mussels, to scallops... need I go on? So your paella has me craving another plate; BAD.

    Thanks for stopping by my blog. I replied to your question about the cucumber salad, but to sum up here it's basically lemon juice, olive oil, salt and pepper. Yum!

  4. Julie your paella sounds wonderful. Both of those recipes are from Ellie Krieger's book So Easy. I've made both of those dishes several times. I'll be sure to write them up this week with pictures and tips.

  5. I used to work at an Italian restaurant that made an amazing Chicken Picatta... I should try to replicate it sometime! Thanks for the inspiration. :)

  8. Thanks for all the kudos. It is appreciated. I did link the tortilla recipe on this site. I have to go back and add pictures. It's from Tasty Kitchen and very, very good. I've made them several times and each time they get closer to looking "round." Betty Crapper tries.

  9. Re your question: My greek salad is probably never the same twice, because I'm one of THOSE cooks. I just make sure it has some key ingredients: black olives, feta cheese, cukes, pepperoncini, oregano. Those are the must haves. Sometimes I just use Romaine lettuce, others I throw in some pasta. Mix it all up with a red-wine vinager based dressing. (For some reason I can not spell that word right now!)
